PLATINUM PROFILE: BILLY CURRINGTON

William Matthew (Billy) Currington (born November 19, 1973) is an American country music artist. Signed to Mercury Nashville Records in 2003, Currington has released three studio albums for the label: 2003's Billy Currington, 2005's Doin' Somethin' Right, and 2008's Little Bit of Everything. These three albums have produced seven singles for Currington on the Billboard Hot Country Songs charts, including the Number One hits "Must Be Doin' Somethin' Right", "Good Directions" and "People Are Crazy". He has also charted as a duet partner on Shania Twain's "Party for Two" and the non-album single "Tangled Up" for a total of nine Top 40 country hits.
Early life and career
Billy Currington was born and raised in Rincon, Georgia, and has four sisters (Lexie, Ann, Kim, and Kelly) and two brothers (Charles and Jason). He lives in Nashville, Tennessee. When he was one and a half years old, his mother married Laurie Currington.
When he was a junior in high school, Currington auditioned for a spot at Opryland, the renowned country music theme park located in Nashville, the country music capital. Failing the audition, after high school he moved to Nashville to pursue his career in country music.[2] His first stint did not last too long, and he later sang for a bar in Georgia. In Nashville, Currington also worked for a concrete company, and also as a personal trainer. One of the clients he worked with as a personal trainer led Currington to recording demo tapes, as well as writing songs. He eventually had cuts by George Strait, Tracy Byrd, and Marty Raybon.[3] After almost being offered to join RCA Records, he signed to Mercury Records Nashville in 2003.

His self-titled debut album was released in 2003. The first single was "Walk a Little Straighter" about his relationship with his alcoholic stepfather, including a chorus that Currington wrote when he was twelve years old.[4] "Walk a Little Straighter" went on to peak at #8 that year on the Hot Country Singles & Tracks chart and established Currington as a major Country performer in Nashville. He first hit the Top 5 on the country charts with his second single, "I Got a Feelin'", also from his debut album.
He scored a third consecutive top 10 hit with Shania Twain in late 2004, on the song "Party for Two". The song was from Twain's Greatest Hits album and was released in two formats: a pop version with Mark McGrath as Twain's duet partner, and the country version, which featured Currington.

In 2005, Currington released a second album entitled Doin' Somethin' Right,[4] which peaked at #2 on the Top Country Albums chart and #11 on the Billboard 200. Doin' Somethin' Right produced his first Number One in "Must Be Doin' Somethin' Right", followed by "Why, Why, Why" at #13 and another Number One in "Good Directions". Co-written by Capitol Records artist Luke Bryan, the latter was the #2 country song of 2007 according to the Billboard Year-End charts. Doin' Somethin' Right is certified platinum by the RIAA.

On July 19, Currington announced he had canceled the rest of his 2007 tour dates because of laryngitis. His 2007 single, "Tangled Up", peaked at #30 in late 2007, and his third album was delayed. He also had to undergo therapy due to trauma induced by the abuse that he suffered as a child.[2]
He was absent from the charts for nearly a year before the release of his next single, "Don't", in mid-2008. It was the first single from his third studio album, Little Bit of Everything, which was released on October 14. Currington co-wrote five of the songs on this album.[5] "Don't" peaked at #2 on the country charts in early 2009. "People Are Crazy", co-written by Bobby Braddock and Troy Jones, was released as the second single from the album in March 2009 and this became his third Number One hit in July 2009.

A 'FOODIE' CHEESECAKE RECIPE

Marbled Sweet Potato Cheesecake
Crust:1 1/2 C. gingersnap cookie crumbs 1/2 C. finely chopped pecans 1/3 C. unsalted butter, melted 1/2 t. ground nutmegFilling:1 16 oz. can sweet potatoes, well drained2 8 oz. packages cream cheese, room temperature 3/4 C. sugar 1 t. vanilla extract3 large eggs 3/4 t. ground cinnamon 1/4 t. ground allspice For Crust: Preheat oven to 350°F. Mix crumbs, pecans and butter in medium bowl until well blended. Press mixture onto bottom and 1 1/2 inches up sides of 9 inch diameter springform pan. Bake crust until set, about 8 minutes. Cool completely in pan on rack. Maintain oven temperature.For Filling: Puree sweet potatoes in processor. Measure 1 cup puree; reserve remainder for another use. Beat cream cheese, 1/2 cup sugar and vanilla in large bowl until blended. Add eggs 1 at a time, beating well and scraping down sides of bowl after each addition. Transfer 1 cup cream cheese filling to small bowl. Add remaining 1/4 cup sugar, sweet potato puree, cinnamon and nutmeg to filling in large bowl and mix until smooth. Pour half of sweet potato filling into crust. Drizzle with half of plain filling. Swirl knife through batters to create marbled effect. Repeat layering with remaining sweet potato filling, then remaining plain filling. Swirl batters with knife again.Bake cake until filling is set, about 45 minutes. Cool. Refrigerate overnight. (Can be made 2 days ahead. Keep refrigerated.) Using small sharp knife, cut around cake and release pan sides. Cut into wedges and serve cold. SOUNDS SO GOOD!! crystallovescountry.blogspot.com

Dorsey Murdock Dixon (14 Oct. 1897-18 Apr. 1968), millworker, songwriter, and country musician, was born into a family of Darlington, S.C., factory workers. His father, William McQuiller Dixon (1875–1939), was a steam engine operator in the Darlington Cotton Manufacturing Company whose seven children followed him into the mill. Dorsey left school after the fourth grade and began working in the Darlington mill when he was twelve. At an early age he showed an aptitude for music in a setting that fostered homemade music. He learned traditional and sentimental songs from his family and neighbors, who would gather at the Dixon house for music making. A local schoolteacher gave him violin lessons, and by the age of fourteen he had taught himself to play the guitar.
World War I brought Dixon a four-year respite from the textile mill while he worked as a railroad signalman for the Atlantic Coast Line in Darlington. In 1919 he was laid off by the railroad and joined the countless mill workers who traversed the Piedmont in search of jobs. During this period he was employed in a Lancaster, S.C., mill and may have worked elsewhere. Sometime around 1927 he made his way to East Rockingham in Richmond County, N.C., where he found work in the cloth room of the Aleo Mill. His parents, his sister Nancy, and his brother Howard all followed him to North Carolina.
MCOUSIN'S GRANDFATHER: In 1927, Dixon married Beatrice Lucele Moody, a fellow mill worker. They were the parents of four boys: Dorsey, Jr., William, Thomas, and Roger. Shortly after their marriage, Dorsey and Beatrice followed Howard Dixon to the Little Hanna Pickett Mill village in East Rockingham. During this time, Dorsey's interest in music intensified with the discovery of his talent for composition. A disastrous fire in a Cleveland, S.C., school-house in 1923 had lingered in Dixon's memory, and in 1929 he expressed his reaction in a poem. His mother and his brother Howard noted that the words could be set to the popular tune, "Life's Railway to Heaven." Encouraged by their enthusiasm, Dorsey began to compose in earnest, developing a pattern he would follow all his life. His first-hand experiences were cast into poetry and set to traditional and traditionally inspired tunes. His subject matter was overwhelmingly drawn from his religious speculations on local tragedies. In spite of long working hours, Dixon would rise at five o'clock in the morning to pursue his art, and he began to play at local functions with his brother Howard.
In the early 1930s, two events played a major role in forming Dixon's musical career. The turn of the decade was a period of unrest in the Carolina textile mills. The violent 1929 strike in Gastonia fueled unrest in Rockingham, where workers went out on strike in 1931. William B. Cole, the intractable owner, shut down his second mill, the Little Hanna Pickett, in retaliation. The strike spread to the Aleo, East Rockingham's third mill, and the town became locked in a bitter dispute between owner and worker, which was only settled with the governor's intervention. Dixon turned to his mill experiences for several songs. A fragment he had learned in the Lancaster mill became "Weaver's Life." He made wry commentary on Rockingham mill conditions in "Spinning Room Blues" and "Weave Room Blues," sung with relish by the strikers. These songs led to his late rediscovery by students of occupational song.
More significant for Dixon on a personal level was the arrival in East Rockingham of the itinerant country musician, Jimmie Tarlton. A fine instrumentalist and confirmed drifter, Tarlton made several sojourns with relatives in the Little Hanna Pickett village. He so impressed the Dixon brothers that they abandoned their guitar and violin duet in 1931. Dorsey developed a unique finger-picking style, and Howard took up the Hawaiian guitar. Their new sound gained them local fame and notice by Fisher Hendley, a fellow musician and talent scout for radio station WBT in Charlotte. In 1934 the brothers became regular performers on the J. W. Fincher's Crazy Water Crystals Saturday Night Jamboree, a popular and influential program that brought the brothers wider recognition. On 12 Feb. 1936, they had their first recording session with an RCA Victor field crew in Charlotte. Over the next two years there were six more sessions in which fifty-five songs were recorded. In two of these sessions, Dorsey also recorded twelve songs with his wife Beatrice. Their commercial recordings brought the Dixons little financial return, however, and the reputation that Dorsey might have enjoyed for his compositions was thwarted by their identification with better-known artists. His songs proved popular among fellow musicians: Jimmie Tarlton had recorded "Weaver's Life" in 1932, Fisher Hendley recorded "Weave Room Blues" in 1937, and "Intoxicated Rat" was recorded by many musicians. A song Dorsey had composed on a fatal car accident in East Rockingham, which the brothers recorded in 1938 as "I Didn't Hear Anybody Pray," was recorded by Roy Acuff in 1942 as "Wreck on the Highway." It is unclear where Acuff had learned the song, but he chose to copyright it under his own name.
Although "Wreck on the Highway" quickly became a country music standard, it brought no assistance to Dixon, who had moved from Little Hanna Pickett back to the Aleo Mill and thence to the Dunean Mill in Greenville, S.C. Disheartened by the Dixon brothers' reverses, by his continued reliance on mill work, and especially by the lack of recognition for his composing ability, Dixon approached a lawyer at his family's urging. In 1946 the threat of a lawsuit in the face of the Dixon brothers' prior recording brought Acuff's partner Fred Rose from Nashville to Greenville, where an out-of-court settlement was reached. With high hopes of further settlements, the family migrated to New York City in 1947; however, a year of this pursuit, supported by work in a Union City, N.J., rayon plant, brought no success, and the Dixons returned to East Rockingham.
His hopes for a musical career lost, Dixon continued his mill work until 1951, when he and his wife moved to Baltimore with their son William. In 1953 Dorsey and Beatrice separated, and he returned alone to East Rockingham. Sustained by his religious convictions, his music played a role in services at the Church of God of Prophecy in Hamlet, N.C., where he performed with his brother Howard once again.
Dixon's songs continued to interest students of hill-billy and occupational song. John Edwards, a young Australian collector, traced Dixon through record company royalty statements and began to correspond with him. His whereabouts identified, he was visited in 1961 and 1962 by folklorists Archie Green, Ed Kahn, and Gene Earle. Their visits produced an album of Dixon's music and led to his invitation to the 1963 Newport Folk Festival. The revival of interest in his music encouraged Dixon to resume performing. During a stay in Washington in November 1963, he was asked to record his music for the Archive of Folk Song in the Library of Congress and for Piedmont Records. His performing comeback was halted in 1964, when he suffered the first of several heart attacks. Forced to decline further invitations, he retired to the care of his son, the Reverend Dorsey Dixon, Jr., in Plant City, Fla., until his death. His body was carried home to East Rockingham.

PLATINUM PROFILE ARTIST: DIAMOND RIO

Diamond Rio is an American country music band formed in 1984 in Nashville, Tennessee. Since its foundation, the group has comprised the same six members: Gene Johnson (mandolin, guitar, fiddle, tenor vocals), Jimmy Olander (lead guitar, Dobro, Danelectro, banjo), Brian Prout (drums), Marty Roe (lead vocals), Dan Truman (keyboards, organ, synthesizer), and Dana Williams (bass guitar, baritone vocals).

Diamond Rio was signed to Arista Records in 1988. Due to a series of health issues affecting three of its members, however, the band did not make its debut until 1991, with the release of the single "Meet in the Middle". It reached Number One on the Billboard Hot Country Singles & Tracks (now Hot Country Songs) charts, making Diamond Rio the first country music group in history to reach Number One with a debut single. "Meet in the Middle" was followed by thirty-two more chart singles throughout the band's career, including four more Number Ones: "How Your Love Makes Me Feel" (1997), "One More Day" (2001), "Beautiful Mess" (2002), and "I Believe" (2003).
Diamond Rio has recorded seven studio albums, two Greatest Hits compilations, and an album of Christmas music. Three of the band's albums have achieved RIAA platinum certification in the United States. In addition, Diamond Rio has received four Group of the Year awards from the Country Music Association, two Top Vocal Group awards from the Academy of Country Music, and thirteen Grammy Award nominations.

Most of the members of Diamond Rio had previous experience in music. Marty Roe, who was named for country music artist Marty Robbins, began singing country music at the age of three, Gene Johnson had previously played with David Bromberg, Jimmy Olander was a former backing member of the Nitty Gritty Dirt Band (another country music band); and Dana Williams was a nephew of the Osborne Brothers.[1]
In 1984, Truman and Roe met for the first time at Opryland USA, a theme park in Nashville, Tennessee.[2] The two soon formed a bluegrass group, which was first named the Grizzly River Boys, and later changed to the Tennessee River Boys.[3][1] Olander and Johnson, who previously worked with Keith Whitley, joined a year later, followed by Prout and Williams. The band's name was finally changed to Diamond Rio, because others had thought that the previous name made the group sound like a gospel music band. The name Diamond Rio came from the names of two truck manufacturers, Diamond T and REO (the latter of which became misspelled in the band's name).[1]
After assuming their new name of Diamond Rio, the band was discovered by Tim DuBois (a record executive at Arista Records) in May 1989. DuBois, who had just opened the label's Nashville division, signed Diamond Rio to a record deal that same month.[3][2] Shortly after the band received its record deal, however, three members came down with health problems: Olander had discovered that he had a tumor, Williams was seriously injured while boating, and Johnson was injured in a carpentry accident.[2]

In 1991, after Olander, Williams, and Johnson had recovered, the six musicians set to work on their first album. Its first single, "Meet in the Middle", was released early that year; peaking at Number One on the Billboard Hot Country Singles & Tracks chart, the song made Diamond Rio the first country music band in history to reach Number One with its debut single.[3][2] The song served as the lead-off to their debut album, also titled Diamond Rio. In addition to "Meet in the Middle", it produced the Top 10 hits "Mirror, Mirror", "Mama Don't Forget to Pray for Me", "Norma Jean Riley" and "Nowhere Bound". Also included on the album was a bluegrass instrumental track entitled "Poultry Promenade", which earned the band its first Grammy nomination.[4] Diamond Rio was later certified platinum by the RIAA for selling more than one million copies in the United States.[1]
Close to the Edge, the group's second album, was released in 1992. Although the album was certified gold for U.S. sales of 500,000 copies, only two of its four singles — "In a Week or Two" and "Oh Me, Oh My Sweet Baby" — reached the Top 10, followed by the #13 "This Romeo Ain't Got Julie Yet" and #21 "Sawmill Road".[3] According to Marty Roe, Close to the Edge was a weaker album than its predecessor because the band only had one month to pick the songs for it; in a 1994 interview with New Country magazine, he stated: "There aren't ten great songs out there for everybody, certainly not that you could find in a 30-day period of time."[5] Also in 1992, lead singer Marty Roe recorded a duet with Pam Tillis entitled "Love Is Only Human" on her album Homeward Looking Angel.[6]
In 1993, Diamond Rio also contributed to Common Thread: The Songs of the Eagles, a tribute album to the Eagles, on which various country music acts performed covers of the Eagles' songs. They performed a cover of "Lyin' Eyes" on this compilation.[4] Common Thread: The Songs of the Eagles went on to earn a 3× Multi-Platinum certification for shipments of three million copies.[4]

Love a Little Stronger, Diamond Rio's third album, was released in 1994.[3] The album was recorded on a more relaxed schedule than the previous album; as a result, they did not have a single on the charts for three months after "Sawmill Road" (the last single from Close to the Edge) fell off the charts.[5] The title track to Love a Little Stronger, co-written by Billy Crittenden of 4 Runner, reached a peak of #2 on the Billboard country singles charts; it was followed by the #9 hit "Night Is Fallin' in My Heart" and the Top 20 hits "Bubba Hyde" and "Finish What We Started". Because the band had taken a longer period of time to choose songs for Love a Little Stronger, it was considered by critics to be a superior album to its predecessor.[5] This album also earned the band its second platinum certification.
Later in 1994, Diamond Rio teamed up with country guitarists Lee Roy Parnell and Steve Wariner. Crediting themselves as Jed Zeppelin, the eight musicians recorded a cover of Merle Haggard's "Workin' Man's Blues" for a tribute album entitled Mama's Hungry Eyes, which featured other country artists' renditions of Haggard's songs.[1][7] In addition to peaking at #48 on the Billboard country charts,[8] Jed Zeppelin's rendition of "Workin' Man's Blues" was made into a music video, which aired on the television networks CMT and TNN (now Spike TV).[7]

[edit] IV, Greatest Hits, and Unbelievable
Titled IV, Diamond Rio's gold-certified fourth album was released in 1996. It produced four singles in "Walkin' Away", "That's What I Get for Lovin' You", "It's All in Your Head", and "Holdin'", all of which except "It's All in Your Head" (which was co-written by Van Stephenson of Blackhawk) were Top Ten hits. The music video for "It's All in Your Head" featured Martin Sheen and Ramon Estevez, the former playing the part of a snake-handling preacher.[9]
In 1997, Diamond Rio contributed a recording of the gospel standard "Walkin' in Jerusalem" to a compilation entitled Peace in the Valley: A Country Music Journey Through Gospel Music.[4] That same year, they released their first Greatest Hits package, which included two new songs as well as the greatest hits from their first four albums. One of these new songs, "How Your Love Makes Me Feel", was released as a single in 1997. It went on to become not only the band's second Billboard Number One, but also the biggest chart hit for any country group that year.[9] "Imagine That", a Bryan White co-write also included on the Greatest Hits package, was a Top 5 hit in early 1998. Greatest Hits became the band's third platinum album.
Unbelievable was the title of the band's fifth studio album. Released in 1998 and certified gold, the album produced consecutive Top Five country hits in the ballad "You're Gone" and the title track. An up-tempo song co-written by Jeffrey Steele and former NRBQ guitarist Al Anderson, "Unbelievable" peaked at #2 on the country charts and crossed over to Top 40 on the Billboard Hot 100, giving Diamond Rio its first appearance on that chart. However, its followup ("I Know How the River Feels") peaked at #33 on the country charts. This song was originally recorded by Ty Herndon and would later be released as a single by McAlyster as well.
By the end of 1998, Diamond Rio was inducted into the Grand Ole Opry, becoming the first band in fourteen years to be inducted.[10] In 1999, TNN also filmed a television special about the band, entitled The Life and Times of Diamond Rio.[4] Kenny Chesney charted in 2000 with the Top 10 single "I Lost It", which band member Jimmy Olander co-wrote with Neil Thrasher. Olander also co-wrote Marshall Dyllon's 2001 single "You".

One More Day, Diamond Rio's sixth studio album, was released in 2001. Although "Stuff", its first single, barely made Top 40, the album's title track went on to become a Number One single. "One More Day" first went into rotation in February 2001, shortly after the death of NASCAR driver Dale Earnhardt. A radio station in New York began playing the song as a tribute, and other stations soon followed suit.[11] "One More Day" also gained heavy rotation after 9/11 as a tribute song to the victims of the attacks.[2][10] Overall, the song also peaked at #29 on the Billboard Hot 100, in addition to reaching Top Ten on the Adult Contemporary charts (the band's first appearance on that chart). The song's success helped boost One More Day to gold certification, making it the band's fourth album to achieve that certification. The third and fourth singles from One More Day, however, were less successful, however. "Sweet Summer" made Top 20, while "That's Just That" failed to make Top 40.
In 2002, the band released its studio album, entitled Completely, and later that same year, Brian Prout married singer-songwriter Stephanie Bentley, a one-time solo singer who co-wrote Faith Hill's 1999 crossover single "Breathe" and charted four singles of her own between 1996 and 1997.[12] (Prout had previously been married to Nancy Given Prout, drummer for Wild Rose, an all-female country band from the late 1980s-early 1990s.)[1] Completely, which was certified gold as well, produced two consecutive Number One singles in "Beautiful Mess" and the Skip Ewing co-write "I Believe",[3] the latter being the band's final Number One. As with its predecessor, however, Completely produced less successful hits in its third and fourth singles (the Top 20 hit "Wrinkles" and "We All Fall Down", which peaked outside Top 40.)

[edit] 2005-2007: Can't You Tell and Greatest Hits, Volume 2
A seventh album, tentatively titled Can't You Tell, was recorded in 2003. However, it was cancelled after its first two singles — the title track and "One Believer" — both failed to make Top 40. Diamond Rio's second Greatest Hits package, Greatest Hits, Volume 2, was released in 2006. Like their first Greatest Hits album, this compilation included several new songs as well as the band's greatest hits; one of these new songs, "God Only Cries", was released as a single, peaking at #30. Shortly after the album's release, Diamond Rio parted ways with Arista Nashville, marking the end of a fifteen-year relation with that label.[10] Roe and Williams, along with bluegrass musician Ralph Stanley, were also featured on Josh Turner's 2006 single "Me and God" (from Turner's Your Man album).

[edit] 2007-present: New record label and The Reason
On August 31, 2007, Diamond Rio signed with Word Records, a Christian music label based in Nashville.[13] Their first album for Word was a Christmas album entitled A Diamond Rio Christmas: The Star Still Shines.
The group will be releasing their very first contemporary Christian album called The Reason which will be released on September 22, 2009. The first single released from the album is "God Is There".

Diamond Rio received the Academy of Country Music's award for Top Vocal Group in 1991 and 1992. In 1992, 1993, 1994, and 1997, they also received the Country Music Association's award for Vocal Group of the Year (an award for which they received fifteen total nominations, more than any other country music group).[2][14] In addition, Diamond Rio has received thirteen Grammy Award nominations.[2]

In the modern age of the country music record business, Nashville record producers have exclusively hired veteran studio musicians and/or background vocalists to record tracks for an album for solo artists and even self-contained bands, as opposed to rock and roll bands who record their own instrumental and vocal tracks on their albums. Diamond Rio has been one of few self-contained country bands to have followed the "rock band" route, each member playing their main instruments and singing their own vocals on all their albums themselves without any additional input from outside sessionists; starting with the One More Day album, however, some of their songs occasionally featured accompaniment from a string section, but the band members have still played and sang their own parts nonetheless.[15] Their early music blended neotraditionalist country with occasional traces of country rock, primarily in the song's rhythm sections.[3][1] A bluegrass influence has also been shown, primarily in the three-part harmonies among lead vocalist Marty Roe, baritone vocalist Dana Williams and tenor vocalist Gene Johnson. Bluegrass influences are also shown in the band's prominent use of the mandolin, as well as in the bluegrass instrumentals featured on many of their albums.[3][1] The band's later material has tended towards pop-oriented ballads, such as "I Believe" and "One More Day" — songs which received critical acclaim for their often religious-themed messages, but were considered departures from the more traditional material of their first four albums.[15]
Another trademark of Diamond Rio's sound is the custom-built B-Bender guitar played by Olander.[16] He refers to this instrument as the Taxicaster because of its yellow body and black-and-white checkered pickguard, which give it the coloration of a taxicab.[5]

[edit] Prior projects
Several of the members of Diamond Rio had experience in other bands before Diamond Rio's foundation. Lead vocalist Marty Roe was previously a member of a band called Windsong, which toured nationally in the early 1980s.[3][5] Dana Williams, the band's bass guitarist, is a nephew of the Osborne Brothers, a bluegrass group which is a member of the Grand Ole Opry; Williams also played in a bluegrass band, and served as a backing musician for Cal Smith, Vassar Clements and Jimmy C. Newman.[5] Dan Truman is a classically-trained pianist who had previously toured with Brigham Young University's Young Ambassadors musical troupe.[5] Gene Johnson, the oldest member of the group, plays mandolin, fiddle, and guitar, had previously worked with David Bromberg, Keith Whitley and J. D. Crowe before joining Diamond Rio in 1985.[5] Drummer Brian Prout was previously a member of the Hot Walker Band, before joining Heartbreak Mountain, a band whose lineup also included Marty Raybon (who would later become the lead singer of the band Shenandoah). Jimmy Olander had previously been a member of The Nitty Gritty Dirt Band.

Chocolate Honeycomb Cheesecake


Chocolate Honeycomb Cheesecake is delicious and easy to make. Perfect with dessert wine for your next dinner party. You'll impress your guests with this recipe.

INGREDIENTS
Base185g plain sweet biscuits
90g butter, melted
Filling
500g cream cheese, softened
3/4 cup caster sugar
2 tblsp lemon juice
3 tblsp gelatine powder
1/4 cup boiling water
1 cup cream, whipped
3 x 45g violet crumbles or Crunchies, roughly crushed
METHOD
Base
Crush biscuits in a food processor or with the end of a rolling pin to fine crumbs. Add melted butter and mix well to combine. Press crumb mixture into base of 20cm springform cake tin. Chill.FillingIn a small jug, sprinkle gelatine powder over boiling water and whisk with a fork until gelatine has dissolved. Set aside to cool slightly.Using an electric mixer, beat cream cheese and caster sugar on medium speed until smooth. Add lemon juice and gelatine mixture and beat until combined. Fold in cream and 2/3 of honeycomb bars.Pour filling over biscuit base and refrigerate for a minimum of 3 hours, preferably overnight. Sprinkle with remaining honeycomb bars before serving.

JAPANESE CHEESCAKE((this sounds interesting!!))

1) soften butter & cream cheese at room temperature.
2) mix them with spatula till well combined.
3) add milk and stir.
4) add yolks and stir.
5) add lemon juice and stir
6) sift flour & cornstarch, incorporate them to cheese mixture
7) beat egg whites & sugar till soft peaks form. Incorporate delicately to the batter
8) pour the batter in a 22 cm springform tin (line based with parchment paper and wrapped with aluminium foil)
9) put the tin in a baking tray - fill with hot water (till half height of the cake tin)
10) bake in water-bath at 150°C for 60 minutes Easy as 1,2,3,4,5,6,7,8,9,10!! c

Hey, check out this recipe...

"BAKED" FRIED CHICKEN(the good for you fried chicken HAHA!)
1 CHICKEN
2t EXTRA VIRGIN OLIVE OIL
1/2 C LIGHT BUTTERMILK
1 T DIJON MUSTARD
1/8 CAYENNE PEPPER(optional)
1/2 C ALL PURPOSE FLOUR
1 t PAPRIKA
1 t SEA SALT
1/2 T SAGE
1/4 t PEPPER
2 C CORNFLAKES
1)Preheat oven to 425 degrees. 2)Pour olive oil in pan big enough to hold the chicken. 3)Rub olive all over pan (lightly coating it!) 4)Rinse chicken and pat dry.
5)Season chicken with salt n pepper and then coat with the flour. Then dispose flour in garbage. 6)Make wet ingredients in another bowl. The mustard, buttermilk, cayenne, paprika, and sage. 7) Roll in buttermilk next.
8)Crush cornflakes then roll chicken in them. 9)Cook in oven at 425 degrees for 15-20 minutes. 10)Turn oven temp down to 375 degrees and bake another 25-30 degrees. Tricky! Check and see if done. You have to adjust this recipe to your stove! It's a really g-u-d dinner!

Why do we sometimes weep and not know why? My son, Terry, was on the road with the Grascals when he called and told me Michael Jackson had died. I cannot tell you why I cried, but I did.I don't own any of Michael's music, but I did enjoy watching him dance. For the life of me, I could not hum a Michael Jackson song, but my mind began rushing, thinking back and seeing Michael interviewed when he talked about his father beating him and forcing him to work constantly -- essentially stealing his childhood.It was just before our Wednesday night Bible study -- we're Baptists, so we eat first -- when I was asked what I thought might have caused Michael's death. I immediately replied, "My thoughts are that the same thing that killed Elvis, killed Michael -- prescribed drugs." It may be weeks before an official cause of death is determined, but I've seen too many lives destroyed by substance abuse.I think about all the country talent from seeing them on CMT, reading about them in magazines and hearing their songs on the radio. Knowing that some of our finest have shortened their lives with the same things that took the lives of Elvis and, possibly, Michael, I wish I had the where-with-all to stand on a soapbox and beg and plead with our wonderful poets to take care of themselves. Look at all the musical genres. We really have the finest flock of singers and songwriters in the world right here in Nashville. I say to each of you, even if I don't know you, that I love you. And I want you sober.I hate that some members of the music community are making some nasty drug lord rich from the sale of their poison while there are hungry children in the U.S.A. who just need some food. Hit songwriters and hit singers, we need you alive onstage -- not as a casualty on some highway.If you've got a problem, you know it. Don't be afraid to tell someone. And, above all, don't be ashamed to get help. We've got some of the best doctors and hospitals in the world here in our town. Go for a cure, not a habit. It is not cool to get high and die. Sending sympathy and love to Michael's family, friends and fans. I AGREE WITH HAZEL SMITH. c
