LEMON MERINGUE CHEESECAKE

LEMON MERINGUE CHEESECAKE

Ingredients:


12 oz cream cheese, softened

4 oz sour cream

3/4 c sugar

2 eggs

2 T fresh lemon juice

Zest of one lemon

one 9-inch graham cracker pie crust (You can make your own by combining 1 c graham cracker crumbs, 2 T sugar, and 4 T melted butter)

Whipped cream, for topping

INGREDIANTS

Instructions:

1. In large bowl, beat cream cheese, sour cream, sugar, and eggs. Add lemon juice and zest, and beat until smooth.



2. Pour into pie crust and bake at 350 degrees for 40-45 minutes. Remove from oven and let cool.



3. Chill for at least 4 hours before serving. Top with whipped topping to serve.

Chocolate Covered Pretzel Cheesecake

Ingredients

2 1/4 C. butter flavored little pretzels ,crushed

1/2 C. butter, softened

2 Tbs. brown sugar

2 8-oz. pkgs. cream cheese, softened

1 C. sugar

1/2 Tbs. lemon juice

1/2 pt. whipping cream

1 tsp. vanilla extract

8 oz. hot fudge topping, reserve enough to garnish

Butter flavored little pretzels to garnish

Directions



Combine crushed pretzels, butter,and brown sugar in a small mixing bowl. Press mixture on the bottom and sides of an 8x8-inch baking dish. Bake for 10 minutes in a preheated 350 degree oven. Set aside and cool. Meanwhile, blend cream cheese and sugar until creamy. Add lemon juice and mix well. In a separate bowl, blend whipping cream and vanilla until fluffy (about 30 seconds). Add to cream cheese mixture and mix just until blended. Microwave hot fudge topping on high 30 seconds and stir well. Microwave a little more until melted and smooth. Pour on the pretzel crust (reserve some for garnish). Pour cream cheese on hot fudge topping. Garnish top with some pretzels and reserved hot fudge topping. Refrigerate 3-4 hours. Cut into 12 squares and serve.

CHECK OUT THIS CHERRY CHOCOLATE CHEESECAKE RECIPE

For topping: Soak undrained cherries and kirsch in small bowl 6 hours.




Thoroughly drain cherries in strainer set over medium bowl, shaking

occasionally, at least two hours. Reserve liquid.



Add enough Morello cherry syrup to cherry liquid to measure 1 cup. Pour

6 tablespoons into heavy 8-inch skillet (reserve remaining liquid for

filling). Halve cherries and add to skillet. Boil until syrup is

thickened and mixture resembles preserves, about 6 minutes. (Can be

prepared 2 days ahead. Chill.)



For crust: Generously butter 9-inch springform pan. Finely crush

cookies in processor, using on/off turns. Cut in butter until mixture

begins to gather together, using on/off turns. Press crumbs into bottom

of pan and up sides to 3/4 inch from top; there should be no cracks.

Refrigerate crust for at least 30 minutes.



For filling: Preheat oven to 325 degrees F. Heat 1 1/2 cups cream with

chocolate in heavy medium saucepan over low heat until chocolate melts,

stirring constantly. Cool 10 minutes.



Beat cream cheese with 3/4 cup sugar until smooth. Beat in eggs 1 at a

time until just combined. Beat in chocolate mixture, then remaining 10

tablespoons cherry liquid and vanilla. Pour into crust. Bake until

outer 2 inches of cake are firm but center still moves slightly, about 1

1/4 hours (top may crack). Cool completely on rack. Top pan with paper

towels and cover tightly with foil. Refrigerate 1 to 2 days.



Remove foil, paper towels and pan sides from cake. Spread cherry

topping over cake. Beat remaining 1 cup cream with 2 tablespoons sugar

and kirsch to peaks. Spoon into center of cake. Top with chocolate

curls if desired. (Can be prepared 2 hours ahead and refrigerated.) Let

stand at room temperature for 15 minutes before serving.

MARIE OSMOND asked Dr. Oz about healthy snacks for her kids

HE told her about things with omega  3, like walnuts and such, blueberries, fish and flax seed.  SHE made a remark that DONNY WOULD'VE WON DANCIN' of HE had taken these!!  Anyway,

BLACK PEPPER CHEESECAKE

Unsalted butter, for pan


1 1/2 teaspoons whole black peppercorns

3/4 pound Philadelphia brand cream cheese, room temperature

1/3 cup sugar

1 vanilla bean

3/4 cup creme fraiche, sour cream, or whole-milk yogurt

2 tablespoons freshly squeezed lemon juice

2 large eggs

1 1/2 cups heavy cream

Fresh pineapple, for serving (optional)

Directions

Preheat the oven to 250 degrees. Butter an 8-by-2-inch round cake pan, line the bottom with a round of parchment paper, and butter the parchment paper; set aside.

Blanch peppercorns in a small saucepan of boiling water for 1 minute; drain. Repeat two more times. Pat peppercorns dry with paper towels

Spread peppercorns evenly in a small baking pan. Transfer to oven until thoroughly dry, 15 to 20 minutes. Remove from the oven, and let cool. Increase the oven temperature to 350 degrees.

In a spice grinder or with a mortar and pestle, grind peppercorns to medium-fine; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese and sugar on medium-high speed until very smooth, about 3 minutes. Scrape seeds from vanilla bean, and add to the cream cheese mixture with reserved pepper. Reserve the pod for another use. Beat in creme fraiche and lemon juice. Scrape down the sides of the bowl. Add eggs, one at a time, beating well after each addition, and scraping down the sides of the bowl as necessary. Beat in cream.

Pour batter into the prepared pan. Place the pan in a large roasting pan. Add enough hot water to come 1 inch up the sides of the roasting pan. Bake until edges are set and center shivers slightly when shaken, about 1 1/4 to 1 1/2 hours. Remove the cake pan from the roasting pan, and transfer to a wire rack to cool completely.

When cool, cover with plastic wrap and refrigerate overnight.

To unmold cheesecake, run a thin knife or spatula around the edges to loosen. Then carefully place the pan over a hot burner, shaking gently from side to side, for about 20 seconds. Invert the cake onto a serving plate, peel off parchment paper, and serve with pineapple, if desired.

RED PEPPER CHEESECAKE




Ingredients

1/2 cup ricotta cheese (4 ounces)

1/2 cup cream cheese (4 ounces)

1/4 cup goat cheese (2 ounces)

1 tablespoon sugar

1 egg

Pinch kosher salt

1/2 cup thin strips roasted red bell peppers

4 pitas

2 tablespoons olive oil

Kosher salt and freshly ground black pepper

1/4 cup apricot jam

1 to 2 teaspoons hot water

Special equipment: 1 (4 1/2-inch diameter) springform (cheesecake) pan

Directions

Preheat the oven to 350 degrees F.

Wrap the outside of the cheesecake pan with 2 layers of heavy-duty foil. Place the ricotta, cream cheese, and goat cheese in a food processor. Pulse to mix. Add the sugar, egg, and salt and pulse a few times until well mixed. Stir in the red pepper strips.

Pour the cheese mixture into the cheesecake pan. Place the cheesecake pan in a roasting pan. Pour enough hot water in the roasting pan to come halfway up the sides of the cheesecake pan. Bake until the cheesecake is golden at the edges and the center of the cake moves slightly when the pan is gently shaken, about 45 minutes (the cake will become firm when it is cold.)

Transfer the cake to a wire rack to cool for 1 hour. Refrigerate until the cheesecake is cold, at least 3 hours and up to 2 days.

To make the pita chips, preheat the oven to 350 degrees F.

Cut the pitas into 8 triangles each (like a pie). Drizzle the pita with olive oil, and sprinkle with salt and pepper. Bake until crisp and golden, about 12 to 15 minutes.

To serve, combine the jam and the water in a small bowl and stir until the jam is liquefied. Remove the cheesecake from the springform pan. Place on a serving plate. Drizzle the jam mixture over the top of the cheesecake. Serve with the pita chips alongside.

RED VELVET CHEESECAKE

Yield: Makes 8 to 10 servings






Ingredients

1 1/2 cups chocolate graham cracker crumbs

1/4 cup butter, melted

1 tablespoon granulated sugar

3 (8-ounce) packages cream cheese, softened

1 1/2 cups granulated sugar

4 large eggs, lightly beaten

3 tablespoons unsweetened cocoa

1 cup sour cream

1/2 cup whole buttermilk

2 teaspoons vanilla extract

1 teaspoon distilled white vinegar

2 (1-ounce) bottles red food coloring

1 (3-ounce) package cream cheese, softened

1/4 cup butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

Garnish: fresh mint sprigs

Preparation

Stir together graham cracker crumbs, melted butter, and 1 tablespoon granulated sugar; press mixture into bottom of a 9-inch springform pan.



Beat 3 (8-ounce) packages cream cheese and 1 1/2 cups granulated sugar at medium-low speed with an electric mixer 1 minute. Add eggs and next 6 ingredients, mixing on low speed just until fully combined. Pour batter into prepared crust.



Bake at 325° for 10 minutes; reduce heat to 300°, and bake for 1 hour and 15 minutes or until center is firm. Run knife along outer edge of cheesecake. Turn oven off. Let cheesecake stand in oven 30 minutes. Remove cheesecake from oven; cool in pan on a wire rack 30 minutes. Cover and chill 8 hours.



Beat 1 (3-ounce) package cream cheese and 1/4 cup butter at medium speed with an electric mixer until smooth; gradually add powdered sugar and vanilla, beating until smooth. Spread evenly over top of cheesecake. Remove sides of springform pan. Garnish, if desired.
